The go to Low Carb favorite for me is by far the Cobb Salad. You just can’t go wrong with chopped lettuce, hard-boiled eggs, turkey, bacon, and blue cheese. Yum! I have found that certain restaurants over glorify the cob salad. They feel the need to add croutons and grilled chicken. Just stick to the basics with this salad and you will love it.
- Romaine or Iceberg Lettuce, chopped
- 1/4 cup of each:
- Blue Cheese, crumbled
- Turkey, diced
- Crispy Bacon, Chopped
- 2 Hard Boiled Eggs, chopped (if you are like me you will ditch the chalky egg yolk to cut down the cholesterol intake)
- Fan out the ingredients of the salad on top of a bed of chopped lettuce.
- Serve with you favorite dressing. Mine is Blue Cheese Dressing. Enjoy!
