Popeyes Special 9

As much as I love cooking, I can’t stand doing dishes. So I love making meals that don’t require three different pots and pans. This is my mom’s recipe. It is a yummy Low Carb meal all in one pot. It is great for breakfast, lunch, or dinner. This is the traditional version with ground beef, but feel free to mix it up with sausage or ground turkey. This is a simple hearty dish that will fill you up and won’t leave you with a bunch of dishes to clean.

Ingredients:

  • 1 lb Ground Beef
  • 1 pkg Frozen Chopped Spinach
  • 4 Eggs
  • 1/2 cup Freshly Grated Parmesan Cheese
  • 1 Onion, diced
  • 1 cup Sliced Button Mushrooms
  • 3 Garlic Cloves, diced
  • Salt & Pepper to taste
  1. In a skillet sweat onions in olive oil over medium heat for five minutes. Popeyes Special 1
  2. Add mushrooms, garlic, and beef. Cook until beef is browned. Popeyes Special 2
  3. Add spinach. Popeyes Special 3
  4. Mix spinach throughly into the meat.
  5. Create a mote in the center of your skillet and add the eggs./li>
  6. Break the yolks and beat the eggs.
  7. Allow the eggs to begin to set. For about three minutes.
  8. Gently fold the eggs into the meat mixture.
  9. Once everything is well incorporated flip the dish mixture over once using a spatula.
  10. Sprinkle cheese over the top. Cover for five minutes until the cheese has melted.
