With Valentines Day just around the corner I figured some of you might be searching for something sweet to make for your sweetie. I got an ice cream maker for Christmas two years ago and I really hadn’t used it that much because I didn’t like any of the low carb ice cream recipes out there. They tend to turn out more icy in consistency than creamy and are hard to scoop. One day I was watching the Food Networks show Unwrapped and they were doing a special on an ice cream factory that made custard based ice creams. I thought that this might be worth trying to make a low carb version. With a little bit of effort this Low Carb Ice Cream turned out perfect! It was creamy and easy to serve. I hope you and your sweetie love this sweet treat!
Ingredients:
- 3 cups of Pasteurized Cream (it’s not as thick as heavy cream)
- 2 Egg Yolks
- 2 teaspoons Vanilla Extract
- 1/2 cup Splenda
- Pinch of Kosher Salt
- In a medium sauce pan heat 1 cup of cream on a low heat setting until it just starts to bubble.
- Add Splenda and salt and stir until dissolved.
- Remove cream from heat.
- In a small bowl beat egg yolks. Using a ladle pour one tablespoon of hot cream into the egg yolks while stirring with a fork. Continue this step three more times untill the egg mixture is up to temperature.
- Pour egg mixture into the warm cream and stir together.
- Return to a low heat setting on the stove and stir for 12 minutes until the cream mixture reaches a temperature of 160°f. Cream will begin to thicken during this process.
- Transfer the sauce pan to an ice water bath. Continue to stir until cool.
- Poor in the remaining cream and stir together.
- Add vanilla extract and stir.
- Transfer custard to a container and refrigerate until you are ready to use.
- Insert the blade and lock down the lid of your ice cream maker and turn it on.
- Place a strainer on top of the ice cream maker pour spout and strain the custard while pouring it into the machine.
- After about 20 to 25 minutes in the ice cream maker the custard will turn into creamy ice cream.
- Serve with your favorite berries. Enjoy!
