Fun with Fondue

I have always loved cheese, but when I met my husband he opened my eyes to gigantic new world of cheese. You see his family on his father side is Swiss and they take their cheese very seriously. I have always been more of a soft cheese lover. From cream cheese to brie I love it all. My husband and his father are more fond of what I like to call firm stinky cheese like Gruyère and Appenzeller. I have grown to love all forms of cheese and one of my favorite things to do during the cold winter season is to serve fondue. Most people when they think of fondue they think of it being served with a huge pile of bread, but I prefer to serve it with some yummy Low Carb options. Make fondue a fun meal with the family by serving it with mini button mushrooms, rotissere chicken, zucchini slices, cauliflower and much much more. There are many varieties of fondues out there, but I am a purist and prefer to use a traditional Gruyère based fondue. I prefer the Emmental and Gruyère fondue sold at Trader Joe’s, but if you feel bold you can make your own from scratch using this recipe and just ditch the cornstarch to make it even more low carb. Just because we live a Low Carb Lifestyle doesn’t mean we can’t have fun with our food. I hope you and your family have some fun with fondue during this chilly time of the year.
