I found this recipe for Pesto Chicken Salad on one of those days when I spent way too many hours on Pinterest. As I stated and/or ranted in the post A Crustless Life, there are too many recipes out there that have unneeded carbs. I love chicken salad, but who says we have to serve it between two slices of bread? I have come to love using baby romaine and butter lettuce. I use small lettuce leaves so I can enjoy every bite. This is a great recipe for taking on a picnic or for lunch at the office.
Ingredients:
- 1 12.5oz can of Chicken, drained
- 1 tablespoon of Pesto
- 2 to 3 tablespoons of Mayonnaise (depending on how wet or dry you like it)
- 1/4 cup Toasted Pine Nuts
- Baby Romaine Lettuce, I tend to serve about 6 leaves per person
- In a bowl mix the chicken, mayonnaise, pesto, and pine nuts together until well blended.
- Serve with the baby romaine lettuce on the side.
- Enjoy! Serves 2 to 3
